Pork belly marinade
180ml soy sauce
90g brown sugar
40g honey
4 stalks spring leek finely chopped
9 cloves garlic finely chopped
20g salt
10 black peppercorns, crushed
180ml toasted sesame oil
1l pear juice
6 red peppers, finely chopped (with seeds)
Wok sauce
50g shallots
1 piece red pepper
1 stalk of lemongrass
Sweat 30g ginger
300ml oyster sauce
200ml water
Strain 60ml soy sauce with sugar / salt to taste
For the pork belly marinade, mix all the ingredients together. Marinate the pork belly and leave to marinate for 24 hours.
